Description
Cavallina Bianca is one of the company’s historic brands and among all the variants the Blend 18 is the refined version of the younger Blend 4. Refined in small oak barrels, for a minimum period of 18months gives it the typical amber colour as well as enriching its flavours. This grappa is soft and balanced, well-bred to the right point.

History
Cavallina Bianca represents one of the historical products and an iconic part of the company’s long tradition since the very beginning in 1895 when it was founded. Right from the start, this grappa was aged in small oak barrels, as the economic resources at the time did not allow the purchase of the expensive steel tanks, so barrels previously used to age wine were used instead. However not much has changed since the first product the ‘’ Cavallina Bianca Stravecchia’’ to all the ones that followed after, and being as they are all still available on the market they should be tried. “Cavallina Blend 4” was first produced in 2007 and its selection of marks comes from 4 different varieties of vineyards.
Production method
The main ingredient is the pomace, but fundamental attention is paid to their selection and fermentation. The 4 different types of pomace deriving from 4 different grapes is the formula that distinguishes this product. The next phase of skilled distillation with copper stills extracts the pure essence of this craftsmanship.
Refinement
Cavallina Blend 18, once distilled, is aged in small oak barrels from where the typical amber colour originates but it also enriches it with various woodie organoleptic sensations. The ageing period is 18 months from which the definition Blean 18 comes from.
How to serve it
We suggest to serve it neat, in a wide-neck glass (snifter - ballon) at a temperature of 16-18° C., leaving it to breathe for about 1 minute after pouring, before the first sip.
Accompaniments
It goes with dark chocolate (75-80%), red fruit jams (blackberries, blackcurrants etc..), also excellent as a dash into coffee.
